We absolutely love Chicken & Dumplings. It’s a delicious southern dish that I can honestly say just warms your belly on a cold day. Today I’m sharing my shamefully easy chicken & dumplings recipe with you all. I say shameful, because it’s truly a shame how easy it is and I’m going to make it even easier for you today!
What kind of chicken do I use? I use a mix of brown and white chicken parts; two breasts and one chicken thigh and a leg or wing. Gives the recipe a “fattier” flavor in my opinion. Please note I didn’t note the caloric intake of this recipe. Let’s be honest, we don’t want to know because it’s that good.
One of the easiest ways to prepare your chicken is by cooking it in the crockpot. Although you might say, “hey I won’t have enough stock though” honey grab two boxes of chicken broth. One your chicken is cooked all the way pull it out and leave the broth in the pot. Let the chicken cool then debone it and shred it. While you are prepping the chicken Take the broth from the crockpot and pour into a large stock pot. Add the two boxes of chicken broth and bring it to a boil. Add a tablespoon of chicken bouillon. I use Better than Bouillon and I get it from Thrive Market (<– my referral link) or I’m sure you can find it in the bullion section of your grocery store. If you don’t like your C&D too soupy just add one box and keep adding to your desired soupiness. If you like it thicker grab a bowl and whisk together half a cup of corn starch or flour with about a cup of broth from the soup. Pour it into the stock pot and stir. Let the soup simmer and the thickening will begin.
Now here’s the secret weapon! Flour tortillas! Grab a package of flour tortillas and pull out about 10 of them. I usually cut them into thick strips or you can just tear them into the pot. Once the stock is boiling add the strips in and stir occasionally. Once the tortillas begin to soften spoon in the chicken and continue to stir until it’s all cooked together.
If you want to skip on on cutting the tortillas, grab a bag of frozen dumplings! Follow the directions on the package and you’re golden. I know this meal is way to easy right? You can make delicious “Semi-homemade” chicken n’ dumplings at a fraction of the time yet full of flavor. Add salt and pepper to taste and serve. I love to squirt a little lemon into the soup too.
It’s a super easy meal that I recall my 6th grade Math teacher saying was super difficult. I have made dumplings from scratch and they are delicious but sometimes I don’t have time so this easy recipe will save time for you too!
