Slow Cooker Carne Asada Tacos

I had you at Carne Asada didn’t I? One of my favorite childhood memories is from barbecues at our house or at my uncles. See, when we say barbecue, we mean beef, chicken and pork on the grill. It’s a full spread! We never did the normal bbq’s of burger and hotdogs so if we ever invite you over to bbq.. don’t expect burgers and hotdogs.. expect a little bit of an more expansive spread. Anyways, now that I’m hungry I want to share with you a super easy way to enjoy some of the food we do at bbq’s by making these Slow Cooker Carne Asada Tacos!

Slow Cooker Carne Asada Tacos

No, I don’t normally use a slow cooker for barbecues but it was a great idea on the fly! A dear friend of mine recently bought a slow cooker then returned it because she wasn’t sure what to make with it. I guess it got my slow cooker creative juices flowing so here goes this recipe! Grab your slow cooker and some thin sliced sirloin tip steak. I’m going to admit something to you first. Sometimes when I buy meat, I’m not sure about how the best way to cook it. If it’s a large slab of meat like this one.. I automatically think slow cooker. I’m not one to put meat in the oven.. so I slow cook it.

Carne AsadaAnd don’t forget your Reynolds wrap slow cooker liners!! I recently tweeted to Reynolds about how much I love their liners! This girl hates washing out the slow cooker.. so I always have stock of these bad boys! Ok so throw the meat in and add some salt, pepper, garlic powder, cilantro and lemon slices . If you want to be really fancy you can throw in an halved onion and a couple cloves of garlic.

Not going to lie, I should have dried off the meat after I washed it. But oh well.. can’t win them all! But it looks fancy with the lemon slices. Set it on high and let it cook! It’ll go about 7 hours and since it’s already sliced you can fork it apart and it’ll be nicely minced.

If you want to really get fancy, before you plate your food sauté some bell peppers, onions and tomatoes. For a lesser calorie meal I opted to go with corn tortillas versus our normal flour. Flour can be thick and heavy. I decided to pair this meal with quinoa. It’s got a lot of extra protein and less bloating than rice. Have you tried quinoa?

The quinoa I picked up at Kroger. It’s pretty nifty because it was frozen so all I had to do was microwave it and I added a few shakes of cilantro and some lime for a little added flavor.

So all in all the meal took me about 20 minutes at the most. Thanks to my slow cooker that did the majority of the work for me we enjoyed these Carne Asada Tacos!

    This looks delicious. I use my slow cooker a few times a month, I love to make slow cooker mac and cheese for big holiday meals. I frees up space in the oven and I don’t have to watch it closely.

    Yum we have taco night every week it seems lately, so this would be a wonderful change. My kiddos love it. I haven’t ever done it in my slow cooker though what a great idea!
