I received a beautiful box of products from Dei Fratelli and the wanna be chef in me became so excited. What was I going to make? Oh goodness the wheels turned and turned. I was surprised at the different tomato products Dei Fratelli produces and I was very happy to learn they can now be found at HEB! Here in San Angelo, there is a good sized HEB and I’m so happy that I can find the Dei Fratelli brand there. Moving around like we do, I hate when I get hooked on a certain brand product then we move and I can no longer pick up the product locally. I’m in the clear with Dei Fratelli! I decided on a childhood favorite with a Candypolooza spin on it.
Here’s my recipe of Chicken and Calabasas
The recipe itself is very easy. Below you’ll find the printable recipe, so you can make it too! I love showing the pictures so you can get a visual of how I made it. It’s very simple and use fresh vegetables so yeah, I’d say it’s pretty darn healthy too!
Sautee the veggies in olive oil until cooked, then pour in the Dei Fratelli Finely Chopped Tomatoes.
Let it simmer then plate. I served with grilled chicken and Spanish rice. I also used the Dei Fratelli tomato juice in the rice. It was absolutely delicious! I’ll have to post a recipe for Spanish rice later. And top with Cotija crumble cheese and if you want to really be fancy, throw in a Cilantro garnish.
This dish is normally soupy. I decided to make it more of a thick sauce to change it up. The family absolutely loved it! I hope your family loves it too! You can omit the onions if you’ve got picky eaters. I also tried the Calabasas (Mexican zucchini) and onion blend over eggs, oh my goodness gracious- DELICIOUS! This is a great way to add veggies into your diet.

- 3 Calabasas (Mexican zucchini)
- 1/2 an onion
- 1 Dei Fratelli tomatoes
- 1 tablespoon of Olive Oil
- Grilled Chicken (cooked)
- Spanish Rice (cooked)
- Roughly chop Calabasas (Mexican zucchini) and 1/2 of onion.
- Add to heated Olive oil and sautee until cooked but not overdone.
- Pour in box of Dei Fratelli tomatoes.
- Let simmer until well blended.
- Plate with grilled chicken and Spanish rice.
